Kat, totally! I was thinking of them for a harvest table as well! I'm not quite sure of the logistics, but I think the copper is an awesome idea...
I would just use copper flashing. It's about $40 for 25 feet (2" wide)
I'd also note that while copper flashing usually has an adhesive back... I would use copper head screws to secure it
